This is the part worth leaving to Iris. Not every pair works, and the ones that do usually already know each other from the same end of the borough. Two companions anchored in the same district have eaten in the same rooms, taken the same last train and can finish each other's stories, which is what makes a table of three feel easy rather than arranged.

Say what the evening is and roughly what you want the temperature of it to be, and two names come back with a reason for the pairing. If you already have one in mind, name her and Iris will tell you honestly who she pairs with best.

The pairings that work best are rarely the two who look most alike in a thumbnail. One who fills a silence and one who is comfortable sitting in it beats two of either, every time, and that is the sort of thing a list of photographs will never tell you.

What the evening is

Two adults booking company together for a set number of hours. Dinner, a function, a long evening in a hotel room with food ordered up and the conversation doing the work. Time and companionship, exactly as everywhere else on this site, and nothing further is offered or implied by the fact that there are two of them.

In practice a duo dinner is louder, faster and funnier than a dinner for two, and it takes the weight off a guest who has had a week that left them with nothing to say.

It is also the booking where the least is expected of you. With three people at a table the conversation keeps moving whether you feed it or not, which is exactly why tired guests ask for it after a long stretch of work rather than before one.

Where it works

Brentford is a good one: dinner at the Lock once the football crowd has gone, water and brick and lit windows, with room at a table outside until the cold wins. Hayes is the other, because the restored record works on Blyth Road has a yard, somewhere to eat and a cinema at the end of it, and the Elizabeth line runs late enough that nobody is leaving at half past ten.

A hotel room works too and is the commonest version by some distance, particularly at the airport end where going out is not really the point of the night.

Notice and arithmetic

Two diaries take longer to line up than one. A day is the realistic minimum and two or three is far better, especially at a weekend or when one of the pair is currently resting. Same evening duos happen occasionally and only when the pair happens to be free, which is not something to build a plan on.

Both fees are handed over in person in the first few minutes, one to each of them, and both are confirmed in writing before either sets off, so nothing is a surprise at the door.

The shape of the table

Book for three if you are going out. Tell the restaurant it is three when you reserve, because nothing out here has a spare chair on a Friday. If you are staying in, order for three and order more than you think, since two companions who know each other will talk through the first hour and start eating in the second.

Extending works the same way it does for a single booking: ask before the last booked minute and, if both their evenings are clear, each steps one rung up the ladder. Occasionally one of them can stay on and the other cannot, and in that case you are told which before anybody agrees to anything, rather than at the door.

Five who pair well

Molly and Angelika are both anchored in TW3 and take opposite halves of an evening, one late and loud, one steady. Nancy and Michelle both work UB3 and between them can talk to anybody in a room.
